Personally, I prefer a 'follower' (last arrow yellow), for a come-from-behind is my personal favorite. That means the horse will run well on all tracks and will be able to make clockwise (CW), counter-clockwise (CCW) & Tight turns. Make all the 'course variations' - Turf (m.y), Dirt (m/y), CW, CCW, Tight- are a circle with another circle inside of it. Raise all the stats (Stamina, staying, feel, ECT.) To their highest (listed above). Then, push R1 until you get to the screen that allows you to edit the horses Abilities & Statistics. Then, after you've got the horse chosen, go to 'Simulation Mode' and choose 'Horse Edit'. If you're unsure of what horse to use, my suggestion is to use an SS colt named 'Plain Guard', or an SS colt named 'Chilly Link'. Don't worry about winning yet- just make sure you know how the horse can race. Ride it a few times in Simulation Mode and get the feel for him/her. You can make it so the horse runs well on both Dirt & Turf, can run any distance of race (5.0~20.0F), has a good interval. There is a way to make your horses stats the highest they can be- 120 for: Speed Staying Stamina and 99 for: Breaking Power Feel Fierce Tenacity Courage Response. This ONLY WORKS with horses make in the game- You CANNOT do it with a horse bred in "Gallop Stallion'.
